Shredded Beef Enchiladas


I finally found a recipe that makes amazing shredded beef. You can use this meat for tacos, burritos or salads. It's full of flavor and has a hint of heat. This has become a regular dish in our house. Hope you enjoy.


Shredded Beef:

  • 1 1/2 lbs of round roast (chuck roast is flavorful but isn't as lean)
  • 1 7 oz can of whole green chiles reserve the juice
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp cumin powder
  • 2-3 cloves of chopped garlic
  • 1-2 cups of beef broth

Preheat oven to 275 degrees. Heat olive oil in a cast iron dutch oven (or baking dish). Combine seasonings and rub onto the meat thoroughly. Sear the meat in the olive oil on all sides. Spread the green chiles over the roast. Add beef broth, reserved green chile juice and chopped garlic. Cover pan and place in oven. Cook 4-5 hours until shreds easily. Check on roast every couple of hours to make sure there is plenty of liquid... if it's low add more broth. You can also cook this dish on the stove top or in a crock-pot.

Other ingredients:

  • 8-10 corn tortillas
  • 1 onion sliced thinly
  • 1/2 tsp olive oil
  • Salt to taste
  • 1 can of chili beans with sauce or black beans drained
  • 1 28 oz can of enchilada sauce (red or green)
  • 1 3 oz can of black olive slices (optional)
  • 1/2 cup of low fat shredded cheddar cheese (I use a low fat Mexican blend)

Preheat oven to 350 degrees. Add olive oil to a heated pan and cook onions with salt until soft. Wet a dishcloth or several paper towels and ring out. Place the corn tortillas inside and cook them in the microwave for 60-90 seconds until soft and pliable. Pour some enchilada sauce over the bottom of a large baking dish. Take a corn tortilla and spoon shredded beef along the center, next add onions then finally a spoonful of beans. Roll and place in pan. Repeat until finished. Add the rest of the enchilada sauce. Top with cheese and olives. Bake covered in tinfoil (spray top of foil with cooking spray to keep the cheese from sticking) for 30 minutes. Serve with sour cream and hot sauce if desired. Enjoy!
